Hearty Winter Soup
Ingredients:
1 large onion
Several cloves garlic
2-3 T olive oil
1 bunch kale, washed and chopped
1 quart canned heirloom tomatoes
Four cans small white beans
2-3 cups vegetable broth
3-4 T chopped fresh sage
1 bay leaf
Salt and pepper, to taste
Sautee the onion and garlic in olive oil until onion is translucent. Add kale and sautee until tender. Add the white beans (not drained) and the quart of tomatoes. Bring to a simmer and add 2-3 cups vegetable broth (depending on how thick you want the soup). Add 3-4 tablespoons of finely chopped fresh sage, plus one bay leaf and a teaspoon of thyme. Let simmer until dinnertime, or at least ½ hour. Salt and pepper to taste.
