Cold Fava and Sweet Red Onion Salad

Ingredients:
2 lbs. fresh fava beans, blanched and peeled
1 small red onion, chopped
1 bunch beets, boiled lightly
Basalmic vinegar to taste.


Instructions: Blanch the shelled fava beans for about a minute and remove from heat. Cool and slip the second shell from the bean. Boil beets until tender. Cool and cube. Mix fava beans, beets, chopped onion and vinegar. Serve cold. Yum!
