Fresh Tomatillo Salsa
Ingredients:3/4 lb. fresh tomatillos
3-4 fresh jalapeņos or other chile
2 tsp. lime juice
1 med. onion
1 clove garlic
1/4 cup cilantro
Remove stem and seeds from chiles. Grill or roast chiles and tomatillos (whole) until browned.
In a food processor, blend tomatillos, chiles, lime juice, garlic, and cilantro until smooth. Mince the onion and add to mixture. Add salt & pepper if desired.
Refrigerate or freeze any unused portions.
